In addition to making some of the most mineral and delicious wines in the country from their beautiful property in the Forest Range, Tim and Mon also make this incredible cider every autumn from local apples, pears and quinces.
The apples come from the certified-organic Schulz family farm, with local pears from old trees and wild apples and quinces also in the mix. All of the fruit is pressed through meadow hay from the Manon farm and fermented and aged in a mix of clay amphora and old barrels before finishing fermentation in bottle as a pet-nat.
All of the varieties have great definition aromatically, and on the palate there’s a mixture of styles of fruit from the various fermentation vessels, with beautifully soft and pulpy primary fruit interwoven with some crystalline and gently oxidative character from the barrel fermentation – all carried by perfectly supporting acidity.
This is brilliant and one of the best-yet renditions of this excellent cider.
