Tim and Mon create some of our favourite wines in the country every year. Their 25 acre property in the Forest Range is perched on an ancient ridge with an abundance of schist and mica and, as a result, their wines often have a captivating notion of depth and minerality.
This cuvee is made only in years when there is a delicacy to the season, with the fruit coming from some of the most mineral and expressive parts of the vineyard. The fruit is foot-trodden and macerated overnight before being pressed to old barrels for fermentation and elevage.
Deep, tense, layered and fresh, this is always one of the most serious and show-stopping cuvees from the domaine, and one to savour over time, with a meal.
