This domaine was established in 2002 and is now run by Luis’ son, Willy Perez. The domaine makes both fortified and unfortified cuvees, with all the fruit grown on classic Jerez chalk.

This cuvee comes from Palomino, a grape commonly used to make Fino- and Manzanilla-style sherry wines. While this cuvee is unfortified, a portion of the wine was aged for a period under flor, resulting in some deliciously salty and complex oxidative character. This is balanced, however, with plenty of primary fruit and freshness, with the final wine a touch less rich and a touch more refreshing than something like Fino or Manzanilla.

This is very high quality and a must for all Jerez fans.
