This multi-vintage iteration of Forever Still is arguably the best wine that James has made yet. Deep, powerful and oxidative, it’s a blend of mature, solera aged chardonnay and then also solera ‘sous-voile’ aged sauvignon blanc from two different sites.
This bottling of Forever Still shows genuine Adelaide Hills slate-y minerality and has a really energised core of acidity - pretty serious stuff this!!
Enjoy with a mature, firm cow’s milk cheese or an assam laksa!
