World-class sparkling wine from Saumur. 

Les Clos Maurice has been making wine in Varrains since the late 1700s and is now, as of quite recently, helmed by esteemed winemaker Nicolas Reau. 

This non-vintage sparkling comes from certified biodynamic vineyards and is predominantly chenin, with a small amount of chardonnay making up the balance. The base wines spent between 3 and 5 years in barrel before being blended and run to bottle for 15 months of secondary fermentation. It was disgorged but received no dosage. 

Today the wine is deep, mineral and layered, with delicate chenin fruit and white flowers and plenty of briochy character from the elevage. This is magnificently well-made and has many of the hallmarks of top-tier Champagne, albeit with a distinctly different shape due to the terroir.
