Corentin Houillon grew up in a milieu of Jura winemaking royalty, learning about wine from his uncle Emmanuel as well as Pierre Overnoy and, later, Dominique Derain in Burgundy.
Today, Corentin farms 5 hectares of steep vineyards in the Savoie, an alpine region south of the Jura nestled among the mountainous Swiss border. The glacial soil here is a complex mix of sandstone, quartz and Jurassic limestone.
This cuvee comes from the variety altesse. The fruit was direct-pressed and saw time in barrel.
It’s concentrated, complex, lightly oxidative and ultra-classical, with a backbone of thrilling acidity – not a far cry from something you might try from a top chardonnay producer in Burgundy or the Jura.
