Lobo de la Sierra Ensamble Mezcal

With all agaves grown in the Sierra Volcanes and transported to the Sierra Occidental for Master Distiller Gerardo Peña (El Lobo, as he is known in the mountains) this amazing spirit is only ever made with mature agave. The agaves are all varieties of Agave Angustifolia, but each are a different sub-species. Maestro Gerardo cooks by hand with above-ground brick ovens and distills in hybrid stainless steel and alembic copper pots.
Distinctive aromas of fresh bread, sweet fermented juice and agave fibre, with apple-y fruit character framed by old wood and minerality.
