Dane and Hannah Johns have come to the attention of many through their Momento Mori label, but for the past 7 years have also started working with a few vineyards at their now-home in Baw Baw, Gippsland. This property spans 95 acres and is home to a couple of 35-year-old plots which have been fully organic since they were first planted.
This wine comes from a section of pinot that tends to have fresher acidity due to its aspect on the property. Dane’s goal with all of the Nikau wines is to capture purity and expression of site, and as such none of the wines go into barrel. This cuvee was direct-pressed and fermented in stainless steel on full solids before bottling.
