This comes from the grape tardana, which is fairly specific to the winegrowing country around Valencia on Spain’s east coast. Like all of Tomas’ wines, the fruit was grown on chalky white soils, the calcareous content of which keeps the wines relatively light and fresh despite the warmth of the region.
The fruit was macerated for a period and then bottled prior to finishing primary fermentation, resulting in a dry ancestral style sparkling wine.
2021 is a great year for the domain, with great concentration and physiological ripeness being a feature across the board.
This is light-to-medium bodied with peachy fruit, some green almond bitterness and a delicious notion of chalky soil in terms of both flavour and phenolic structure. A great option for apéro hour.
