We’re very excited to have a few bottles of this rare cuvee in the building – organic, additive-free appellation Chablis, courtesy of Domaine Bernard Defaix.
Didier Defaix has been experimenting with unsulphured, unfiltered wines over the years and in 2022 decided to start releasing a sans soufre bottling after overwhelmingly positive feedback.
This is made in miniscule quantities with fruit from a 40-year-old vineyard in Milly. The fruit was direct-pressed and saw fermentation and maturation in stainless steel. It’s steely, round, pulpy and primary, with restrained fruit, delicate lees character and plenty of regional drive. Very special!
